Abstract:
Milk is a valuable source of essential nutrients, however, its quality can be compromised by a number of factors, including adulteration and fraud. Therefore, the general objective of this research is to discuss the importance of milk quality control in the industry as a guarantee of food safety. A Dairy was selected to illustrate the types of chains, as well as concerns about the quality and safety of milk in a production area. On the receiving platform, inadequate practices include accepting milk that should be rejected and the lack of specific tests for fraud traceability. Therefore, it is concluded that it is essential to implement better training of employees in the dairy system, carry out specific tests for fraud traceability, and ensuring good management, from milking to the processing unit.
