Abstract:
This study aimed to analyze pre-slaughter handling practices in a federally inspected
beef slaughterhouse and their influence on meat quality. The stages of transport,
resting, spray bathing, and stunning were evaluated, relating them to animal welfare
principles and meat quality parameters. The methodology was based on direct
observations, photographic records, and the application of a compliance checklist
according to MAPA (Brazilian Ministry of Agriculture, Livestock and Supply) and OIE
standards. The results demonstrated a high level of compliance at the slaughterhouse,
particularly regarding spray bathing and animal reception. The average meat pH (5.6)
indicated adequate handling conditions, without the occurrence of defects such asDFD or PSE. It is concluded that the implementation of standardized protocols and
continuous staff training are essential to ensure animal welfare, productive efficiency,
and the quality of the final product.
